    This is a dish I made based on a recipe by Linda Gassenheimer in her book, the Low-Carb Bible. I made some modifications because I found myself liking the dish but feeling that there’s just something missing in it (and too much tangy taste). I love her recipes because the food, though low-carb, don’t make me feel deprived, taste great and easy to cook, especially for someone like me lacking in cooking skills! :-)

    Chicken Balsamico

    Ingredients:

    • 2 teaspoons olive oil
    • 2 pcs. chicken breasts fillet (in the original recipe, it was salmon; but, I bet, any fish fillet or meat would do)
    • 225 grams sweet potatoes, peeled and cut into 1/2 inch cubes
    • 75 ml. Balsamic vinegar
    • mixed salad leaves
    • 1 medium-sized tomato, sliced
    • basil, pepper, and salt to taste
    • salt and black pepper to taste

    Heat olive oil in a non-stick frying pan using medium heat. Cook the chicken breasts until they’re light brown. Sprinkle the cooked side with basil, salt, and black pepper to taste (I usually use pepper liberally and only a pinch of salt and basil, especially if those who’ll be eating it aren’t really into spices. If it’s my meal, I use a lot of basil). Once done, set it aside.

    In a separate pan, heat some water and once boiling, add the sweet potato cubes. Cook it until it’s tender and then drain. Add the balsamic vinegar and the sweet potatoes to the cooked chicken breasts, return the frying pan to heat and cook until the balsamic vinegar has thickened a little.

    When done, place the chicken breasts and sweet potato cubes on a bed of mixed salad leaves. Add the tomato slices and spoon the glaze and drizzle it on top of the chicken breasts and sweet potato cubes.

    This makes 2 servings.

    There’s nothing more amazing than seeing old-time favorites presented in a new way.  That’s the reason why I got so amused and took a picture (and had a taste too!) of this seemingly regular halo-halo served in a coconut, au naturel.

    What I also love about this dessert is the big chunks of coconut white meat that’s not usually found in the regular halo-halo.  One could also put a scoop or two of ice cream to make it richer.  But for me, I’m fine with the buko and halo-halo.

    Buko ni Frutas can be found in most fast food courts, but the one I visited was in SM North.

    I was just coming out of SM Cinemas after watching the new Indiana Jones movie when I spotted a new kiosk where it should have been only a congregate of plush seats (“tambayan” seats for the loafers).

    It was my first time to try a Sebastian ice cream and so I simply ordered what looked yummylicious: A Chilly Burger!

    Cookies ‘n Cremeburger

    Cookies ‘n Cremeburger is made of dark chocolate cookies, which serves as the “bun” of the “burger”, with white chocolate ice cream as the “burger patty” and then rolled on crushed oreos. It did satisfy a craving for cookies and dark chocolates. But let me warn you: you can’t finish this burger alone. Good to share with a buddy, I think. Unless you’re cookie monster.

    I was glad to discover that Sebastian’s Ice Cream Kiosk/Studios is due to the pioneering efforts of a Mr. Ian Carandang, a University of the Philippines Diliman CFA graduate. Discovering Ben and Jerry’s Ice Cream, with its innovative names and flavors, in the U.S. inspired him to make ice cream flavors that can satisfy various cravings. Can you imagine that he developed his first ice cream flavors using an old-fashioned ice cream churn that uses rock salt and crushed ice? Then, together with his college friends, Vitto Lazatin and Tony Bondoc, they set out to bring it to market, producing Sebastian’s Ice Cream Studios.
